Angus Beef
Kiko Chevon
At our family ranch, we’re dedicated to providing you with the finest locally raised, grass-fed, and grass-finished Angus beef and Kiko chevon. Our animals spend their entire life on pasture feasting on grass, trees, and native perennials. We believe deeply that food is medicine, and it’s our privilege to nourish your loved ones with wholesome, high-quality meats.
You’re likely familiar with Angus beef, the most prevalent beef cattle breed in the U.S., making up 60–70% of the nation’s herd. Its popularity stems from its exceptional flavor, superior marbling when grass-fed, and its role in supporting healthy pastures when managed sustainably. We’re proud to bring this outstanding beef to your table.
We’re equally excited to introduce you to Kiko chevon, a unique offering from our farm. Developed in the 1980s by Garrick and Anne Batten in New Zealand, Kiko goats were bred for hardiness and rapid growth in rugged hill country—remarkably similar to our Sierra foothills home. These goats thrive here with minimal supplemental hay, boasting robust health and strong birthing rates. In Dan’s opinion, Kiko chevon surpasses even the finest beef in flavor, offering a deliciously distinct taste. Try it for yourself—we’re confident you’ll love it as much as we do!
How Do I Buy?
At Cool Pastures Ranch, purchasing our premium grass-fed Angus beef and Kiko chevon is straightforward and rewarding, offering a farm-to-table experience that’s just a step beyond the grocery store. We provide flexible options to suit your needs: beef is available by the whole, half, or quarter, with a quarter yielding approximately 100–150 pounds of expertly cut meat. Our Kiko goats are offered by the whole or half, with a half providing about 35–50 pounds of delicious chevon.
We process our beef annually in mid-July, while our goats are processed throughout the summer and fall, ensuring fresh availability through year-end. Once our trusted local butchers have skillfully cut and wrapped your order, you can choose to pick it up directly from the butcher or have us deliver it to you. The meat arrives frozen, neatly packed in durable cardboard boxes. For example, a 50-pound box of beef or chevon measures approximately 16" x 16" x 10" (about 1.25 cubic feet), fitting easily into your freezer.

How Much Does It Cost?
Our pricing and payment process is designed to be transparent and make purchasing our premium grass-fed Angus beef and Kiko chevon as straightforward as possible, though it differs slightly from a grocery store experience. You’ll work with both us, your trusted ranchers, and our skilled local butchers to bring the finest meats to your table.
Butcher Fees: You’ll pay the butcher directly for their services, typically around $1.50 per pound of "hanging weight" (the weight before final cutting, about 30% more than the final cut weight). For example, a quarter beef yielding 100–150 pounds of cut meat might have a hanging weight of 130–195 pounds, resulting in butcher fees of approximately $195–$292.50. If you opt for delivery, we can coordinate these details for you.
Deposit: To secure your order, we require a deposit, which varies based on the quantity of meat purchased (e.g., whole, half, or quarter beef; whole or half goat). We’ll provide a clear deposit amount when you place your order.
Why Our Pricing Stands Out: Unlike some suppliers who base costs on hanging weight, we simplify things by charging only for the final cut weight—the actual meat you take home. This ensures clarity and fairness.
